My head hurts. It just hurts. I dont know if it was because i stayed up till 4am that night or staying up for too many nights or it's just filled with too many things. Kidding that cant be true.
I have a lab assignment due on friday, and concrete homework due on friday (which i know nth about). Concrete is actually due on monday but i wont be there for monday's class soooo..
To make life easier, im just going to talk about eggs.
1. Hardboiled
This is first on the list because i eat them in ihouse now. Without the yolks of course. Idk how they do it but its sorta perfect.
My favourite hardboiled are when
- i crush the shells on the table and they peel off perfectly
- the egg whites are soft and moist
- the yolks are like 90-95% cooked so they are still kinda soft. Those are the yolks i will make.
Ihouse does it more perfectly than i have ever seen anyone done. Maybe cos i havent had gordon ramseys singaporean apprentices hard boiled eggs before (yes i went all the way there)
2. Softboiled eggs
I love these. Oh how i miss softboiled eggs. Singapore style.
Idk how people can put light sauce on their halfboiled eggs like hello???? Dark sauce is soo much better. There is a fragrance to darksauce that complements the egg and the pepper sp well. It TIES the egg and the pepper together okay.
I like my softboiled when
- the whites are liquidy (like duh, they make up most of the soup right)
- the yolk is mostly thick-liquidy (cos they make up the taste)
- but i like it when there is one chunk of the yolk that is on its way to hardboiled, like 70% when the rest of the egg is 50 %, if u put a totally liquidy halfboiled egg at 50%
3. Poached eggs
There is not much to say about poached eggs. Everyone loves them. Ok almost everyone. It's like the best of both worlds. U get the hardboiled whites with the softboiled yolks.
Besides the perfectly flowy yolk when u cut open the egg, my favourite poached eggs are when the outsides are smooth also. Hahha dont ask me why.
Weird fact: Sometimes when the cafe gives u an option on how u want ur eggs to be done all at the same price, i will choose the poached egg option even tho i dont really really like poached eggs. It's as though they need more skill to poach eggs, it's more expensive outside (eggs brn are so ridiculously overpriced i kant even-), and i feel like i 赚到 of i were to order them poached. And then i dont really enjoy the meal but i pretend i do HAHAAHHA
4. Scranbled eggs.
This can be said to be my favourite style. I like it when they are still mushy and gooey. I HATE CHUNKY SCRAMBLED EGGS. It's just too overcooked i kennut.
I think it's at about level 75-80% cooked. (Yeah close to soft boiled)
So basically when i do scrambled eggs it's super fast: pour the eggs in, stir for like 10s can take out alr LOL.
My mum does this so well. She tried her best to give us the eggs we like <3 . So she does it in this small plate, with pepper and oregano sprinkled on top, and then if she has some leftover she will put smoked salmon right at the top.
Omg i miss this so much.
5. Sunny-side up
I think this is one of the hardest eggs to do. And by far koja has done it the best.
I like it when the yolk is think and gooey and flows. Ideally the whites that are near the yolk should be gooey too.
I like to ask me mum to make 2 joint sunny-side ups, then line a rice bowl with the egg, then put the rice on top. Then i will mix the rice such that the yolk and white mixes with the rice and then i put dark sauce and TADAHHHHHH heaven on earth. but if it's kimchi fried rice then the egg has to be ontop of the riceee, and then when the yolk drools over the rice... ohgod.
